Hyderabadi Green Chicken

Green chicken!

This is a simple recipe usually served at weddings in Hyderabad. Unique in taste and easy to make so finds its way to my table most often.

Ingredients:

  • Chicken 1kg
  • Step 1: Marination:
    • Salt as required
    • Ginger garlic paste 1½Tbsp
    • Green paste 4-5Tbsp ( coriander, green chilies, mint)
    • Vinegar 1Tbsp
    • Tomato ketchup 1Tbsp
    • Coriander powder 1tsp
    • Chaat Masala 2tsp
    • Gram Masala 1½tsp
    • Spinach( 6-7 leaves made to paste)
  • Step 2: Marinate the chicken with the above spices
    • Curd 150gms
    • Fried onions (deep fry 1 onion until golden brown)
    • Cashew 10-15 (roasted)
    • Make a paste of curd, fried onions and cashew and add to the chicken.
    • It is best to marinate the chicken over night or 1-2 hours at least before cooking.

Method of preparation:

  1. Take 1-2 ladles of oil in the pot and put it on medium heat. Add the marinated chicken and allow to cook for 7 to 10 minutes with occasional stirring in between. Continue cooking until the chicken is tender.
  2. Finally take capsicum cut into long strips or cubes. Fry it in ghee or butter and add it to the cooked curry.

Tips:

  • To enhance the flavor and give it a smoky taste. Heat a small piece of coal on flame. When the coal is burning carefully place it in a small bowl and keep it in curry container, pour a few drops of oil or butter and cover the lid immediately to trap the smoke within.
