THE ROYAL LEGACY

Qubani ka meetha is believed to have originated in the royal kitchens of the Mughal Empire.
The Nizams, who were vassals of the Mughal Empire, adopted and refined many Mughal culinary traditions, including qubani ka meetha.
The Royal dessert, Qubani ka meetha was a favorite dessert of the Nizams of Hyderabad, who ruled the region from 1720 to 1948. It was served at royal banquets and special occasions.

Qubani ka Meetha Recipe
Ingredients:
- 1 kg Qubani (apricots)
- Sugar (as per taste)
- Water (for soaking and cooking)
- Fresh cream or custard (for serving)
Method for preparation:
- Wash the qubani and soak them overnight in water. Remove seeds and separate the flesh.
- Cook the flesh in the same water for 5-7 minutes. Add sugar to taste and cook until the sugar dissolves.
- Allow the mixture to cool. (Optional: grind the cooked pulp to a paste.)
- Break open the depitted seeds and soak the kernels in hot water, remove skin, and add kernels to the dessert.
- Garnish with qubani almonds, fresh cream, or custard. Serve cold.
