Kheer Recipe: A Delicious and Healthy Dessert Option

Introduction:

Kheer is a popular dessert in Hyderabadi household, perfect for weddings, weekend get-togethers, or any occasion. This recipe allows you to enjoy a delicious dessert while keeping calorie count in mind.

Ingredients:

  • 1 cup Basmati rice
  • 1.5 liters Milk
  • Sugar (as per taste)
  • 3-4 crushed Cardamom
  • Chopped Nuts of choice (almonds, cashew)

Method of Preparation:

  1. Soaking Rice: Soak rice in water for an hour.
  2. Cooking Rice: Choose one of the following methods:
    • Method 1: Cook rice in milk until soft, cool and then grind (cooking with this method gives smooth kheer).
    • Method 2: Grind soaked rice and then cook in milk, stirring continuously to avoid lumps ( Results to grainy textured kheer) .
  3. Cooking Kheer:
    • Cook the mixture until it begins to boil.
    • Add desired sugar, crushed cardamom, saffron strands(optional) and continue cooking until simmering.
  4. Serving:
    • Dish out and serve cool.
    • Garnish with chopped nuts.

Tips:

  • Stir constantly to avoid burning or sticking to the vessel.
  • Always cook on low to medium flame to avoid burning.
