Ingredients:
- 1 kg Chicken (washed, cleaned, and drained)
- Salt (to taste)
- Ginger garlic paste (1.5 tbsp)
- Red chilli powder (to taste)
- Turmeric (0.5 tsp)
- Vinegar (3 tbsp)
- Soya Sauce (3 tbsp)
- Roasted nut paste (5-7 tbsp; almonds, cashew, coconut, chironji)
- Curd (3 tbsp)
- Green paste (2 tbsp; coriander and green chillies)
- 1 large onion (deep-fried)
- Tomato paste (0.5 cup)
- Oil (1 ladle, used for frying onions)
- Garam masala powder (1 tsp)
- Chat masala powder (1 tsp)
- Curry leaves (a few)
- Lemon juice (2 tbsp)
- Fresh cream or malai (2 tbsp)
Method:
- Marinate chicken with listed ingredients for 1-2 hours.
- Grind fried onions with tomato paste and add to the chicken.
- Heat oil (used for frying onions) in a cooking pot.
- Splutter curry leaves and add marinated chicken. Cook on medium heat.
- Cook until the chicken is tender.
- Sprinkle garam masala and chat masala.
- Add lemon juice and finally, before switching off the flame, add fresh cream.
- Serve with Naan, Roti, or Boiled Zeera Rice.
Tips:
- For a smoky flavor, heat coal on flame, place it in a small stainless steel bowl in the cooking pot, add oil, and cover the lid.
- Red food color can be omitted, as tomato paste provides a rich red colour
