Hyderabadi Red Chicken (Wedding Special)

Indulge in the rich flavors of Hyderabadi cuisine with our signature Red Chicken recipe! This unique blend of aromatic spices, tangy vinegar, and savory sauces creates a dish that's not only delicious but also long-lasting. Perfect for special occasions or everyday meals, this Hyderabadi Red Chicken recipe is sure to impress!

Ingredients:

  1. 1 kg Chicken (washed, cleaned, and drained)
  2. Salt (to taste)
  3. Ginger garlic paste (1.5 tbsp)
  4. Red chilli powder (to taste)
  5. Turmeric (0.5 tsp)
  6. Vinegar (3 tbsp)
  7. Soya Sauce (3 tbsp)
  8. Roasted nut paste (5-7 tbsp; almonds, cashew, coconut, chironji)
  9. Curd (3 tbsp)
  10. Green paste (2 tbsp; coriander and green chillies)
  11. 1 large onion (deep-fried)
  12. Tomato paste (0.5 cup)
  13. Oil (1 ladle, used for frying onions)
  14. Garam masala powder (1 tsp)
  15. Chat masala powder (1 tsp)
  16. Curry leaves (a few)
  17. Lemon juice (2 tbsp)
  18. Fresh cream or malai (2 tbsp)

Method:

  1. Marinate chicken with listed ingredients for 1-2 hours.
  2. Grind fried onions with tomato paste and add to the chicken.
  3. Heat oil (used for frying onions) in a cooking pot.
  4. Splutter curry leaves and add marinated chicken. Cook on medium heat.
  5. Cook until the chicken is tender.
  6. Sprinkle garam masala and chat masala.
  7. Add lemon juice and finally, before switching off the flame, add fresh cream.
  8. Serve with Naan, Roti, or Boiled Zeera Rice.

Tips:

  • For a smoky flavor, heat coal on flame, place it in a small stainless steel bowl in the cooking pot, add oil, and cover the lid.
  • Red food color can be omitted, as tomato paste provides a rich red colour
